  • 2 lbs. asparagus, cooked
  • ¼ cup nonfat sour cream
  • 1 cup skim milk
  • 1 tsp. balsamic vinegar
  • 2 tbsp. Dijon mustard
  • 1 tbsp. flour
  • pepper to taste
  1. Combine the milk, mustard, and flour in a small saucepan and blend well.
  2. Cook over medium heat, stirring occasionally, 2 to 5 minutes or until mixture thickens and is bubbly.
  3. Stir in the sour cream, vinegar, and pepper. Heat through, and spoon the warm sauce over cooked asparagus.
  4. Serve immediately.
